Venison game larderTop chef Jose Souto, who regularly appears at game fairs and country events cooking on the Taste of Game kitchen, has produced a new book all about venison.

Venison is experiencing an unprecedented growth in popularity with the British public as a delicious, healthy and increasingly available dish.

Venison – The Game Larder features more than delicious 50 recipes. Jose, senior chef/lecturer in culinary arts at Westminster Kingsway College, has added to his own repertoire of 30 dishes by inviting guest chefs to add their own favourite venison recipes to this book, opening up a wide range of dishes, from simple venison lasagne to elegant dinner party show-stoppers. It also features smoking and curing techniques along with butchery and cuts.

But this is more than just a cookbook.

Partnered with stunning photography by Steve Lee, another keen supporter of Taste of Game, the text is a complete celebration of deer and deer stalking. Jose is a keen stalker himself, and in the book he explains the history of deer management in the UK, the different species found here, and how to shoot them.

Jose is a game expert who gives master classes on preparation and game cookery to other chefs worldwide, as well as teaching a new generation of student chefs how to cook venison.
