Pigeon and Brie Tart

This recipe uses a lot of cupboard and pre-made ingredients so quick and very easy for a summer main with a salad and new potatoes or a snack

  1. Heat oven to 180c. Gas mark 4 Add a tbsp of oil to a frying pan and heat. Once hot seal Pigeon Breasts on both sides in a hot pan for 3 minutes.
  2. If using ready-made pastry line an individual tin and blind bake, then follow the instructions below - if using pre-made individual pastry tarts: Place the Onion Marmalade into the bottom of the tart case covering the bottom. Place the Pigeon in the case with sliced Brie on top, bake for 5 minutes
  3. Season, then decorate with Toasted Pine Nuts, Chicory leafs and Salad Dressing.
