Loin of Venison with Feta Cheese

A great venison recipe with feta cheese, chorizo and chilli. This is easy to do but will impress.

  1. Take the six baby chorizos, cook for a couple of minutes in olive oil in a saucepan. Add the orange juice. Take the sweet chilli peppers and add to the including the juice from the peppers and simmer for 10 minutes allowing it to reduce well.
  2. Cut the Feta Cheese into cubes and place on a warm plate, add the pesto. Season each side of the Venison with Chilli Flakes, Salt and Pepper.
  3. Sear in a very hot pan for 2 minutes each side. Allow the venison to rest for 4 minutes or until the juice has started to run onto the plate
  4. Take the sweet chilli peppers and chorizo out of the liquor and arrange on the plate with the feta cheese, add the venison and drizzle with the orange liquor.
