This one-day specialist seminar covers all aspects of small and large game from its identification and preparation to its background, history and cooking tips.

- Are you interested in learning more about UK game?
The seminar is designed to attract food experts, professional and amateur chefs who all have a passion to discover more about UK game.
The specialist one-day seminar will cover all types of feathered and furred game, studying identification and preparation to its background, history and cooking tips and techniques.
The day is split into two main sections:
Section 1- Feathered and small furred game
You will discuss each species of bird and small furred game individually- looking in detail at their hanging, quality points, classification, recognition and preparation.
Section 2- Venison
- This section will cover all the deer species found in the UK. You will be able to see a demonstration of a whole carcass followed by a butchery class where you will see it displayed as joints and larder trimmed cuts.
Friday 18th November at the Printworks Campus
Refreshments served from 9.30am for a 10.00am start. Finish at 4.00pm
